Nvivo for Mac DOES NOT allow you to run queries that exclude nodes/codes. Nvivo for Windows DOES have this feature where you can select queries that are "Coded at" and "Not Coded at". Identifying that Nvivo for Mac did not have this feature was not easy or quick. Most of the online tutorials and resources do not address that function. Even the Nvivo features comparisons, https://www.qsrinternational.com/nvivo/nvivo-products/nvivo-product-suite-overview, makes it seem as all three versions have the same features for Coding Query, "Explore and ask questions about your coding to find overlaps and intersections using operators like AND & OR." It does have an additional feature that specifically states that Not operator only available with Nvivo for Windows. Would be helpful to add that to your feature comparisons.
