It would also be nice to save palettes of colors. For example, I'd like to save our corporate colors so that the visuals in NVivo would fit better in our corporate reports.

This should go without saying. Why is there a limited number of colors in the first place? The color palette available (including the number of colors) should be totally customizable, in addition to which it should be possible to assign any desired color to any item in the project and to have that color displayed in appropriate places, such as lists and graphs.

It would be good to be able to assign textual titles and descriptions for colors selected to be in a palette, so that the meanings of the colors could be recorded in the project and displayed in menus, windows and tooltips (e.g. the color balls in lists) with the colors.

There could also be options for displaying the color ball in list view's column and using the selected color as item's text/background color, according to one's preferences and the selected color palette.
